Mango Kadhi - Fajita - Vegetarian Recipe by Annuradha Toshniwal [HD] <br />INGREDIENTS- <br />2 pairi mangoes (any sour variety, if unavailable) <br />1 alphonso mango (any sweet variety, if unavailable) <br />3 cups water <br />2 tbsp. yogurt <br />3 tbsp. chickpea flour (besan) <br />2 tbsp. ginger chilli paste <br />salt to taste <br />sugar to taste <br />pinch of asafoetida <br /><br />Tempering- <br />2 tbsp. oil <br />1/2 tbsp. mustard seeds <br />2 whole red chillies <br />few curry leaves <br />2 green chillies split <br />1 tsp. red chilli powder <br />2 tsp. coriander powder <br /><br />METHOD- <br />- Gently roll the mangoes to loosen the pulp <br />- Cut and remove the pulp in a bowl <br />- Take 3 cups of water in a bowl. Add the seeds of the mango and rub to remove the pulp from the seed. <br />- Add yogurt, chickpea flour & ginger chilli paste. <br />- Mix well. Keep aside. <br />- Heat oil. Add asafoetida, mustard seeds. <br />- When they splutter, add curry leaves, whole red chillies. <br />- Immediately add the mango mixture and stir till it boils. <br />- Add salt and sugar to taste. <br />- Serve hot with boiled rice. <br /><br />NOTE - The remaining mango pulp can be used for Aamras, Mango Milkshake etc.
